Artichoke and Ginger Tea

Ingredients:

  • 1 large artichoke

  • 25g of fresh ginger slices.

  • 1200ml water

  • Fresh lemon slices

  • Honey (optional)

Directions:

  1. Using a sharp knife, cut the artichoke in half and thinly slice the ginger root. Place the artichoke halves and ginger slices in a large stock pot and cover them with water.

  2. Bring to a vigorous boil for 10 minutes then, turn down heat to low to simmer. Simmer for 20 to 25 minutes until the artichoke hearts are tender.

  3. Turn off heat and serve the tea with fresh lime juice. Sweeten if preferred.
