Canary Melon Ginger Popsicles

The most indulgent Canary Melon Ginger Popsicles - perfect as a summer treat with a touch of mint, spice, tart, and sweetness in every bite.

Ingredients - make about 10 to 14 popsicles

1105g canary melon chunks without the rind

35g fresh ginger root, peeled

70ml fresh lemon juice

5g fresh spearmint leaves

25ml raw honey

Directions

  1. Add all the ingredients to a blender and blitz well on high speed for 2 minutes until everything is well combined and pulverized.

  2. Pour the blended contents into a popsicle maker and keep in the freezer for about 4 hours or overnight to form popsicles.

  3. Serve frozen and enjoy!
