Fluffy Pumpkin Spice Donuts
These Gluten-free and Fluffy Pumpkin Spiced Donuts are made with butternut (pumpkin) squash puree together with nutritious ingredients and warm spices to energize you and brighten your mood. Have it as a snack or whenever you like.
Ingredients:
225g butternut squash puree
230ml cashew milk
20g ground flaxseed
2 tsp vanilla extract
70ml raw honey
¼ tsp fine sea salt
7g fresh ground ginger
25ml coconut oil plus extra
100g millet flour
85g cassava flour
45g chickpea flour
½ tbsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground allspice
¼ tsp ground cardamom
1 ½ tsp baking powder
½ tsp baking soda
40g hemp seeds plus extra
Directions:
Preheat oven to 375˚F.
In one mixing bowl, combine all the wet ingredients - butternut squash puree, cashew milk, ground flaxseed, vanilla extract, raw honey, fine sea salt, fresh ground ginger and coconut oil. Whisk well and set aside.
In another mixing bowl combine all the dry ingredients - millet flour, cassava flour, chickpea flour, ground cinnamon, ground nutmeg, ground allspice, ground cardamom, baking powder, baking soda and hemp seeds. Mix well and pour the dry mixture into the wet mixture.
Use a wooden spoon to gently combine the mixtures to form a thick batter and set aside to rest for about 10 minutes for the ingredients to mingle and activate before forming donuts.
Meanwhile, prepare a donut baking ware by brushing some coconut oil in each cavity.
Use a small spoon to fill each donut cavity then sprinkle some hemp seeds on each filled cavity to serve as a garnish.
Bake for 21 minutes until golden brown.
Remove the donut baking ware from the oven and allow rest for about 5 minutes before releasing the donuts.
Carefully use a palette knife to ease the donuts out of their cavities and rest the donuts on a cooling rack.
Serve the donuts warm as is or with a spread of nut butter along a cup of tea, juice, or one of these cozy beverages.
Store the rest of the donuts in a parchment-lined storage container and keep in the fridge or freezer if you decide to make a large batch.
