Gluten-free Chocolate Donuts

 

Light, fluffy and effortless. These Ultra Chocolate Donuts are 100% gluten-free, made with 100% cocao powder to soothe ALL your chocolate cravings to the max. They just might be your new favorite snack to munch on because they are that good!

Makes 10 -12 donuts

Ingredients:

56g oat flour

50g almond flour

20g millet flour

2 tbsp dutch cocoa powder

1 tbsp espresso instant coffee powder

1 tsp cinnamon powder

1/4 tsp fine sea salt

1 1/2 tsp baking powder

1/4 tsp baking soda

1/8 tsp finely grated nutmeg

2 eggs

192ml plant-based milk

1 tsp vanilla extract

55ml raw honey

Chocolate frosting

110g extra dark chocolate chips

45g sliced almonds

1 tbsp olive oil

1 tbsp warm plant-based milk

Directions:

  1. Preheat oven to 350˚F

  2. Prepare a silicone donut bakeware. Alternatively oil up or spray the cavities of a metal donut bakeware and set aside.

  3. Separate the egg whites from the yolks and place each in two separate mixing bowls.

  4. In the bowl with the yolks, add in the milk and whisk well. Add in all the dry ingredients, gently whisk to combine and set aside.

  5. Whisk the egg whites vigorously until frothy with soft peaks and slowly add in the honey while whisking. Do so until well combined. Add in the vanilla extract and whisk again but minimally.

  6. Scoop a little of the beaten egg whites and gently fold it in the cacao mixture to incorporate. Do so until well combined with no white streaks. Set aside for five minutes while bubbles form.

  7. Evenly measure out about 1/4 cup of the mixture or more depending on the size of your bakeware and fill in each cavity of the donut bakeware.

  8. Bake for 18 minutes then remove and set on a flat surface to cool for about 5 minutes.

  9. Gently remove the donuts from the bakeware and set on a cool rack to cool off.

  10. To make the chocolate frosting, add in the chocolate chips in a clean mixing bowl and melt over a double boiler. Otherwise fill up a big bowl with some boiled water and submerge the bottom of the bowl with the chocolate chips in it making sure it can sit well in it without any water entering the melting chips. Add in the olive oil and milk and mix well.

  11. Set the bowl of chocolate frosting aside alongside the bowl of sliced almonds. Dress the donut with chocolate frosting and top with sliced almonds. Repeat for all donuts.

  12. Serve these gluten-free chocolate donuts with a cup of tea or one of these cozy beverages.
