Apple Almond Granola Cookies
These gluten-free Apple Almond cookies are so easy to make and just right for a midday snack or a post-workout snack to keep you energized and happy all day.
Makes 12 cookies
Ingredients
105g oat flour
94g almond flour
52g whole old fashioned oats
34g hemp seeds
1/2 tsp fine sea salt
1/2 tsp baking soda
1/4 tsp allspice powder
1 1/2 tsp cinnamon powder
25g raw pumpkin seeds
35g golden raisins
21g raw sunflower seeds
15g black sesame seeds
220 - 230g freshly shredded apple
2 eggs
35g raw honey
40ml olive oil
1 tsp vanilla extract
1/8 tsp of grated nutmeg
Directions:
Preheat oven to 400˚F and line a baking sheet with unbleached parchment paper and set aside.
In a mixing bowl and using a whisk, combine all the dry ingredients, except the nutmeg and set aside.
In another mixing bowl, combined the cracked eggs, raw honey, olive oil, vanilla extract and grated nutmeg. Whisk well and set aside.
Grater the fuji apple until you get an amount totalling 220 - 230g of it and add to the egg mixture. Combine very well and add in the dry ingredients.
Combine this pretty well, cover with a clingfilm wrap and keep in the fridge for 10 to 15 minutes so the flours can easily absorb the liquid ingredients to make it easier to form into cookies.
Then measure out 66g of the cookie dough and gently form into a ball. Place on the lined baking sheet and lightly press to form a well—rounded cookie measuring about 2 inches. Repeat this process for the remaining cookie dough.
Bake for 15 minutes until golden brown then set on a cooling rack to cool off.
Serve these with tea, as a delectable midday snack or post workout to keep you energised and happy.
