Blueberry Ginger Bars

Blueberry Ginger Bars are made with only 7 ingredients and no cooking is needed. They are uber creamy and delicious and are a perfect way to use any extra berries you have on hand from making blueberry pies and such.

Ingredients:

150g raw cashews + extra for topping

45g ginger root, peeled and chopped

1 Β½ tbsp ground cardamom

shy of ΒΌ tsp coarse sea salt

300ml spring water

55ml raw honey

235g frozen blueberries

  1. Prepare a popsicle maker, parchment-lined loaf tin or a silicone mold of your choice.

  2. To a clean food processor or high speed blender (for smoother texture) add in the raw cashews, ginger, ground cardamom, salt, honey, and water. Blend on high speed until well combined and creamy. Reserve about 30% of this mixture in the clean container and to the rest of the mixture in the food processor or blender, add in the frozen blueberries and blend on high speed until well combined.

  3. Pour the blueberry flavored mixture in the parchment-lined loaf tin and top with the plain reserved mixture. Gently swirl both colors using a spatula and top with fresh berries, chopped cashews and fresh mint leaves.

  4. Cover the loaf tin with a clingfilm and store in the freezer overnight or at least 4 hours until the mixture gets firm. Once done, remove from the freezer and let it sit at room temperature for about 10 - 15 minutes to help cut the loaf into slices (or bars) with ease. Dip a knife in warm water and cut the frozen blueberry ginger loaf into bars. Serve with fresh berries.
