Plantain Cookies

Plantain Cookies - there are so many ways to make cookies and these Plantain Cookies are full of flavour, they are crispy and perfect as a gift to a loved one.

Ingredients:

225g sorghum flour

¾ tsp ground cardamom

heaped ¼ tsp ground all spice

heaped ⅛ tsp ground nutmeg

1 ½ tsp ground cinnamon

heaped ¼ tsp baking powder

heaped ⅛ tsp baking soda

195g plantains, ripened and peeled

heaped ⅛ tsp coarse salt

30g ground flaxseed

¾ tsp vanilla extract

60g raw honey

52ml/ 3 tbsp + 1 tsp unrefined coconut oil

extra sorghum flour for dusting the cookie stamps


Directions:

Preheat oven to 375°F.

In one mixing bowl, combine all the dry ingredients except the salt and ground flax seed.

In another mixing bowl combine all the wet ingredients including the salt and ground flaxseed.

Add the dry mixture to the wet mixture and fold in well to form a dough.

Form about 18 to 22 balls of cookie dough and lay on a parchment-lined baking sheet leaving about 2 - 3 inches of space between each cookie dough. Dust a cookie stamp with some the extra sorghum flour and press each cookie dough until well flattened and printed then release with a palette knife if you need be.

Transfer the flattened cookies with the baking sheet to the oven and bake for 15 to 20 minutes or until golden.

Once done baking, set the baked cookies to cool on a cooling rack. The colder the cookies get the crisper they become.

To take it a step further, feel free to dip half of cookie in melted chocolate and top with chopped nuts to give it an extra layer of flavour and crunch.

Serve with tea or hot chocolate and be merry.
