Carrot Cake Overnight Oats

Carrot Cake Overnight Oats is protein packed breakfast idea to fuel you for the day ahead while supporting your gut health and keeping your protein intake high. It highlights a few ingredients like carrots, cinnamon and walnuts - all used in the making of carrot cake.

Ingredients:

45g old fashioned oats

1 ½ tbsps chia seeds

3 tbsps thinly shredded carrot

2 tbsps chopped nuts (11g, 1 tbsp walnuts, 14g, 1 tbsp cashew)

35g steamed quinoa

1 tsp cinnamon powder

25ml raw honey or date syrup,

sprinkle of kosher salt

300ml pumpkin cream or your favorite plant-based milk

  1. Combine together the old fashioned old fashioned oats, chia seeds, shredded carrot, chopped nuts, steam quinoa, cinnamon powder, honey or date syrup and a sprinkle of salt. You can add grated ginger for spice if preferred. Add in your favorite plant based milk to blend the ingredients.

  2. Mix the combination well and store it in the fridge overnight to thicken and get ready for breakfast the next morning. Serve with thinly shredded carrot and walnut topping.
