Date Pickled Cucumbers

Date pickled cucumbers are a taste of sweet, spicy and sour treat. Have them on their own, or pair with your meals for an extra refreshing crunch factor.

Ingredients:

454g, about 5 - 6 mini or persian cucumbers

60g pitted dates

65ml fresh lemon juice

2 tsps red pepper flakes

2 tsps coarse sea salt

100ml boiled water

  1. Add the pitted dates to a bowl and pour in some boiled water to cover the dates and soak for 15 to 20 minutes to soften them.

  2. Strain the dates from the soaking water and set aside in a clean mixing bowl while saving the “date water”.

  3. To make the pickled dressing, mash the softened dates with a fork and add in lemon juice, red pepper flakes, sea salt and 50 ml of the “date water.”

  4. Combine together until well combined and set aside.

  5. Cut the cucumbers into 1/2 inch slices and add to the dressing. Toss well and keep chilled in the fridge for about 2 hours for the flavours to mingle and the cucumbers to get crispier.
