Epic Lentil Salad
Epic Lentil Salad - If you are not a fan of lentils or find it hard to cook or season lentils to perfection, this recipe will have you cooking lentils again and again with pure excitement and make this Epic Lentil Salad a must on your weekly and monthly meal planners.
Ingredients:
250g lentils, brown or green
2 tbsps olive oil
75ml lemon juice
2 tsps fresh lemon zest
55g red onions, diced
14g, 3 garlic cloves, finely chopped
4 tsp of coarse sea salt
1 tsp black pepper powder (optional)
1/2 tsp cayenne pepper
2 tsps coriander powder
2 tsps cumin powder
a handful of fresh dill, finely chopped
a handful of fresh mint, torn or roughly chopped
Directions:
Sort through the lentils to make sure they are free of pebbles and tiny rocks.
Wash the lentils and soak in plenty of water overnight to cut down on cooking time.
Drain the water from the lentils and add to a cooking pot with 2 litres of fresh water and a 2 tsps of coarse sea salt.
Bring to a boil and cook the lentils for 15 minutes or until tender.
Meanwhile, make the salad dressing by stirring together the olive oil, lemon juice and zest, red onions, garlic, 2 tsps salt, black pepper powder, cayenne pepper, coriander powder, cumin powder, chopped mint and dill and set aside or chill for later use.
Once lentils are done cooking, drain and set aside to cool in a salad bowl or meal prep container for at least 12 to 13 minutes or chill in the fridge for later use.
Combine the chilled lentils and salad dressing until lentils are well coated. Taste to adjust seasonings. Serve warm or cold.
Serve with flatbread, flax crackers, french fries, freshly chopped and massaged beet greens, kale or with steamed millet or rice or just as is.
Notes:
This Epic Lentil Salad is a perfect meal for weekly meal prep and provides a good dose of nutrients to help one achieve one’s diet and fitness goals.
For firmer lentils, cook the lentils for 10 - 12 minutes or until it is just cooked or opt for Beluga lentils (black lentils) or Lentils de Puy (French lentils). Simply follow your package’s instructions to cook these lentils.
Red lentils will not be ideal for this salad - they will turn mushy but are perfect for this Red Lentil and Oat Porridge for breakfast.
