Ghanaian Puff/Bofrot
Ghanaian Puff puff also know as Bofrot is a yummy street food that is very well loved in Ghana. This Bofrot recipe is made gluten-free, without yeast, has a considerably amount of healthy fiber (due to the homemade gluten-free flour blend) and low in sugar so if that’s something that fancies you, my dear, you are in for a treat!
Ingredients:
220g brown rice flour
155g cassava flour
300g sorghum flour
105g chickpea flour
¾ tsp cinnamon powder
¼ tsp nutmeg powder
1 tbsp baking powder
¼ tsp fine Himalayan salt
14g, 2½ tbsp psyllium husk fiber
1030 - 1265ml water 215g raw honey
800ml 100% avocado oil (for frying)
Directions:
In one mixing bowl, combine together all the dry ingredients and whisk well, then mix the water and the honey in another mixing bowl. Less water makes the bofrot firmer and more water makes the bofrot moist on the inside. Add the wet mixture to the dry mixture and mix very well using a wooden spoon. Then let the total mixture rest for about an hour or two preferably in a warm spot, like in an oven (don’t turn it on) with the light on for the batter to rise well.
Once the batter has a good rise and bubbles form on the walls of the mixing bowl, pour some avocado oil into a clean and dry saucepan until it reaches almost three-quarters of the saucepan. Use more avocado oil if the cooking pot is larger. Heat up the oil on high heat until it is just hot - not too hot or smoking.
Scoop small portions of the batter using a spoon or a ¼ measuring cup and gently ease them - one by one - into the hot oil. Fry as much as can fit in the pot without the pot getting crowded.
Let the bofrot fry for about 5 to 7 minutes until the get golden brown. Most times these yummies will turn on their own but if that’s not the case, use a wooden spoon to turn any that were left unturned.
Once done frying, use a slotted spoon to remove the yummies from the frying oil and lay on a kitchen towel/ tissue-lined colander then repeat the frying process for the remaining batter.
Serve the bofrot warm as is, with jam or gravy.
