Green Onions and Peas Frittata
If you prefer a one-pan deal for breakfast, look no further than this scrumptious frittata which is a celebration of green onions and peas.
Preparation Time: 10 - 15 minutes
Cooking Time: 22 minutes
Ingredients:
1 tbsp fresh oregano
1 tbsp fresh rosemary sprigs
5g fresh parsley
2 tbsp extra virgin olive oil + extra (if needed)
45g/ 4 spring or knob onions
1 garlic clove
3/4 tsp fine sea salt
ground black pepper
1/4 tsp crushed red pepper flakes
120g frozen green peas
6 eggs
60 ml cashew milk
1/4 tsp baking powder
Directions:
Preheat oven to 400˚F.
Rinse the frozen green peas under cold water and set aside to drain well. Thinly slice the green onions and garlic clove and chop the fresh herbs and set aside.
In a large mixing bowl, combine the cashew milk, eggs and baking powder and whisk until well combined.
Set a cast iron skillet on medium to high heat and in extra virgin olive oil together with the sliced green onions, salt, black pepper and crushed red pepper. Saute for 2 to 3 minutes until softened.
Then add in the chopped herbs and green peas. Stir well to combine and sizzle for about 2 minutes.
Pour in the egg mixture and gently stir to ensure that the sauteéd blend is well distributed in the egg mixture. As the mixture begins to cook for 45 to 60 seconds, use a wooden spoon to lightly shift the filing into the egg mixture so everything is well combined. The mixture will still be a runny at this stage.
Using a kitchen mitten or towel, transfer the cast iron skillet to the oven and bake for 15 minutes until the centre of the egg mixture is completely set.
After baking, set aside on a heat proof surface to cool for 5 minutes and serve hot with a crust of bread, a plate of salad or by itself.
Notes:
Other fresh herbs you can use instead include basil, chives, cilantro, and dill.
Other alternatives to spring onions include regular bulb onions - red, yellow and white.
