Pumpkin Chia Pudding
Perfect way to start your day, with just a touch of homemade pumpkin spice and a sprinkle of pumpkin seeds. Enjoy!

No cooking time: 1 hour to Overnight
Ingredients
105g ~1/2 cup chia seeds
150g ~ 1/2 cup pumpkin puree
900ml cashew milk or your favorite plant based milk
1.5 tsp vanilla extract
80g pitted dates
45g pumpkin seeds
2 tbsp pumpkin spice
2 tbsps flax seed powder
a pinch of fine sea salt
Directions:
Combine the dates, pumpkin puree, cashew milk, salt and vanilla extract in a blender and pulverize until smooth.
Pour the mixture in a large storage container and whisk in the pumpkin spice and flax seed powder.
Add in the chia seeds and whisk well until you achieve a homogenous mixture.
Cover the container with its lid and refrigerate the mixture for an hour or preferably overnight.
Serve with a sprinkle of homemade pumpkin spice and pumpkin seeds. Enjoy!
