Pumpkin Chia Pudding

 

Perfect way to start your day, with just a touch of homemade pumpkin spice and a sprinkle of pumpkin seeds. Enjoy!

Preparation Time: 10 minutes

No cooking time: 1 hour to Overnight

Ingredients

  • 105g ~1/2 cup chia seeds

  • 150g ~ 1/2 cup pumpkin puree

  • 900ml cashew milk or your favorite plant based milk

  • 1.5 tsp vanilla extract

  • 80g pitted dates

  • 45g pumpkin seeds

  • 2 tbsp pumpkin spice

  • 2 tbsps flax seed powder

  • a pinch of fine sea salt

Directions:

  1. Combine the dates, pumpkin puree, cashew milk, salt and vanilla extract in a blender and pulverize until smooth.

  2. Pour the mixture in a large storage container and whisk in the pumpkin spice and flax seed powder.

  3. Add in the chia seeds and whisk well until you achieve a homogenous mixture.

  4. Cover the container with its lid and refrigerate the mixture for an hour or preferably overnight.

  5. Serve with a sprinkle of homemade pumpkin spice and pumpkin seeds. Enjoy!
