Vegan (Chickpea) Burger
This EPIC Chickpea Burger is packed with plant-based protein, robust flavour and nourishing elements that will make you feel so good when eating it.
Ingredients:
For the mushroom sauce:
106g white onions, sliced
131g portobello mushrooms, sliced
3 garlic cloves, sliced
a few fresh oregano sprigs
2 tbsp coconut oil
1/2 tsp coarse sea salt
1/2 tsp ground coriander seed
1/4 tsp cayenne pepper
For the pickled onions:

Ingredients
72g shallots, sliced
3/4 tsps coarse sea salt
2 tbsp apple cider vinegar
For the mushroom and onion sauce:
Directions:
On medium to high heat, add the coconut oil into a warm cast together with the onions, garlic, coarse sea salt, ground coriander seed, cayenne pepper and oregano sprigs. Stir well and let the combo saute for about 5 to 6 minutes.
Add in the sliced mushrooms and fold in well.
Cover the pan with a lid, reduce heat to low and continue cooking for 8 minutes until onions are caramalized and mushrooms are limped. Turn off the heat and serve with steamed rice, millet, sandwich or on a burger.
For the pickle onions:
Directions:
Combine the sliced shallots, salt and apple cider vinegar and stir well. Allow the contents to marinate for about half an hour or keep refrigerated and add to daily meals as needed.
Notes:
Condiments for the burger:
Fresh kale leaves, Hummus, Sweet Bell Pepper Slices and fresh lentil sprouts. Feel free to opt for condiments of your choice to make your personlized burger.
