Oat and Red Lentil Porridge

 

The perfect meal for breakfast to boost up your energy levels and support your well-being as you maintain an active morning or daily routine.

Ingredients:

70g red lentils

70g old fashioned oats

45g nut butter or preferred nut butter

50ml raw honey

1/4 tsp cinnamon powder

1/4 tsp fine pink salt or sea salt

1 tsp vanilla extract

500 ml warm water or warm milk

 
 

Directions:

  1. Pour the red lentils in a sieve and wash under running water until the water runs clear.

  2. Pour it in a saucepan together with all the remaining ingredients - oats, nut butter, cinnamon powder, salt, vanilla extract and warm water - except the honey.

  3. Stir well and cook on medium to high heat for 6 - 7 minutes, stirring every now and again to prevent the contents from sticking to the bottom of the saucepan.

  4. Cover with a lid and turn off heat.

  5. Leave covered and undisturbed for another 5 minutes until oats and lentil are softened and well cooked and the porridge thickens.

  6. Stir in the honey and serve with a sprinkle of pumpkin and hemp seeds. Feel free to add in a scoop of yogurt for a cooling effect.
